About COULEE REGION COOKS

Coulee Region Cooks is a food interview show with the relaxed energy of a local radio studio pretending, cheerfully, to be a kitchen. It is practical first. Courtney Voller talks with people who cook, bake, cater, smoke meat, build grazing boards, sell fudge, make pizza, study nutrition, or help plan a holiday table. The appeal is in the specifics. Elsie and Lee explain the food trailer, long brisket days, event space, patio setup, and the strange surprise of a building that keeps going. Clara from Clara's Bakes talks through cakes, macarons, farmers markets, pop-ups, lead times, and flavors that can go from lovely to perfumey if handled wrong. A Viterbo University nutrition and dietetics class turns a studio visit into a plainspoken explanation of registered dietitian training, supervised practice, and the difference between formal credentials and general nutrition interest. Barry Voller brings the family-holiday version of the show, with Easter proteins, smokers, prime rib, ham, turkey, and burgundy pepper spoon roast on the table. Mad Dog and Meryl from Midwest Grillin' push the cooking talk outdoors, covering wild game, moisture, duck breasts, turkey breasts, pheasant breasts, and a Vietnamese injectable. Emily and Hannah from Hunt and Gather Grazing Boards keep things social with charcuterie, catering, chocolate-covered strawberries, event samples, and shirts that make sense in Wisconsin. Linda from Valley Fudge and Candy Company adds the small-business arc, from a craft-show start to a website rush during Easter and Mother's Day. Cy Fix from Saxon Hall brings the restaurant rhythm, with kitchen-staff pizza experiments, slow months, and ideas that sometimes simply do not work. The show does not turn food into performance. It asks how things are made, how long they take, what people should order, and what happens when demand suddenly shows up. The conversations are loose enough for jokes and family asides, but grounded enough to be useful. It is especially good at making local food businesses feel approachable, one menu detail at a time.

Made for: Built for Coulee Region listeners who like local restaurants, bakeries, catering, grilling, holiday menus, and the people behind them. It also fits home cooks who want approachable ideas without formal cooking-school distance.

What sets it apart: The show stands out by treating food coverage like a friendly service conversation: what is available, how it is made, how far ahead to order, and what a customer should expect. Its strength is local detail, not polished culinary performance.

In their own words

Each Thursday morning, Courtney Vaaler is joined by some of the best chefs and home cooks throughout the La Crosse area as they share their favorite recipes. Catch Coulee Region Cooks on the radio Thursday mornings at 10am on WIZM, 92.3 FM and 1410 AM.
