Takeaways from the P3 Profitability Summit in Fort Worth, TX

·27 min·2 clips
Chip Klose explains how profit, process, and progress drive consistent 20% returns for restaurant owners.
The summit was in Fort Worth. Chip calls it the biggest P3 event of the year and the best attended one so far, then uses that as proof of the community he has been trying to build. He starts with the basics: two live events a year, a rotating city, and people willing to show up in person. That setup matters because his point is not just that the room felt good. It is that people bought tickets, booked flights, reserved hotel rooms, and gave three days to the same conversation. Digital rooms have their place, but he clearly thinks the real room changes the level of commitment. From there, he gets practical fast. Conferences, trade shows, conventions, and summits can give people plenty of information. The messy part starts on the way home, when the notebook is full and the owner has to decide what happens Monday. Thirty, forty, or fifty ideas can feel useful until they turn into clutter. Chip's answer is a filter. Review everything, build a top 10 list around what is most usable, most likely to matter, or easiest to grab now, then cut it down again. Pick three things and put them into practice in the next two weeks. That is the line he keeps drawing between a good event and an actual result. He talks about playbooks, table scripts, manager actions, server and bartender coaching, and catering manager tasks as material that needs to be used, not admired. The end gets more promotional. P3 began with one group of 10 members in 2021, and Chip says it has grown to more than 120 members across four groups, with more than 350 people through the program. His pitch is direct: the community is growing because he believes the model helps restaurant owners make more money and free up time.
