A serendipitous opportunity arose to prep meals for San Francisco Giants players, cementing her business direction. The Green Kitchen now serves 250 clients with a meal prep model focused on performance nutrition and health recovery. Shannon emphasizes using organic ingredients, being seed-oil-free, gluten-free, and using compostable packaging. She discusses her client demographics: half are individuals navigating health crises, and half are busy professionals seeking convenience. Shannon outlines her business challenges, including managing margins and logistics. She plans to expand into wholesale partnerships with local retailers like Kaleidoscope Juice.
