Nicole Rucker discovered a cold butter method that eliminates creaming, changing cookie-making forever.
Nicole Rucker's previous book Dappled was a deep dive into fruit; Fat and Flour is the opposite — a simplification project born from pandemic exhaustion and forced sabbatical. The key innovation is the Cold Butter Method (CBM), which Rucker developed after watching a UK bakery's video of reverse creaming for a Levain-style cookie. Instead of creaming butter and sugar until light and fluffy — a step that is imprecise (room-temperature butter means very different things in a warm California kitchen versus a cold Minnesota kitchen), time-consuming, and requires constant bowl scraping — you dump all dry ingredients into the mixer, then work in cold butter until sandy, exactly like making pie dough. The result is more consistent, more reproducible, and takes the same 30 minutes needed to preheat the oven anyway. Her signature chocolate chunk cookies use actual chocolate bars (more accessible than specialty chips, and the shape changes how the cookie spreads), a small amount of oatmeal for texture, and only 30 minutes of chill time rather than the multi-day aging that has become fashionable. Later in the episode, an Iranian-American chef talks about her cookbook exploring Iranian regional diversity: the north and south of Iran have so different a cuisine that dishes from the two regions sitting side by side look unrelated. She declines to add her own chili obsession to iconic stews like ghormeh sabzi or fesenjoon, which she won't touch, but creates entirely new dishes — a tahini-date salad that is distinctly Persian in ingredients but entirely her own creation — that express both her heritage and the influence of other cuisines she loves.
